Today let’s continue talking about the Dietary
customs about Start of Summer.
今天我们继续谈谈关于初夏的饮食习俗。
During the Start of Summer season, the
people in Fuzhou must eat dingbian paste (also known as pot side paste), which
is a flavor snack made by brushing the pot side with rice paste, and then
adding dried shrimps, black fungus, amaranth, mushrooms, clams, and so on.
Cooking dingbian paste is also called "doing summer", on this day of
cooking dingbian paste, not only is it for the family to eat well and go to
work in the fields, but also to give to the neighbors on the left and right to
taste together.

立夏时节,福州人要吃鼎边糊(又称锅边糊),是用米浆涮锅边,再加入虾米、木耳、苋菜、香菇、花蛤等做成的风味小吃。煮鼎边糊,也叫“做夏”,这一天煮鼎边糊,不光是一家人吃饱吃好后下田劳动,还要互赠左邻右舍一起品味。
On this day of Start of Summer, people in
Ningbo must eat "foot-bone bamboo shoots", which are boiled with
black bamboo shoots, each about three or four inches long, not cut open, and
when eating, two of the same thickness of bamboo shoots must be picked and
eaten in one bite, saying that eating it can make "the foot bones
strong" (good health). Then there is the eating of ruancai (junta cai),
saying that after eating it, there will be no prickly heat in summer, and the
skin will be as smooth as ruancai.

在立夏这一天,宁波人要吃“脚骨笋”,用乌笋烧煮,每根三四寸长,不剖开,吃时要拣两根相同粗细的笋一口吃下,说吃了能“脚骨健”(身体康健)。再是吃软菜(君踏菜),说吃后夏天不会生痱子,皮肤会像软菜一样光滑。
Lixia Guo is the Start of Summer dietary
custom in Yiyang, Jiangxi. On this day, every family in Jiangxi will cook a
large pot of Lixia Guo and eat it all day. Lixia Guo is made by steaming rice,
kneading it until it is soft, rubbing it into small balls, adding bean sprouts,
bean curd, dried shrimps, peas and other ingredients to cook into " Lixia
Guo ", also known as Start of Summer porridge. It is said that eating Lixia
Guo means sending off spring and welcoming summer, and the more varieties there
are, the more abundant the spring harvest is, with joy and surplus.
立夏粿是江西弋阳的立夏食俗。立夏这天,江西人家家户户都会煮一大锅立夏粿,吃一整天。立夏粿是用米蒸熟后揉烂,搓成小团子,加入豆芽、豆干、虾皮、豌豆之类的食材一起煮成“立夏粿”,也叫立夏羹。相传吃立夏粿表示送春迎夏,品种越多就表示春收越丰富,喜庆有余。

In Hunan, people will also eat Lixia Guo.
However, this Guo is not that Guo. In Changsha, the Guo referred to is the soup
dumplings made of glutinous rice flour mixed with mouse ergot grass, which is
also called "Start of Summer porridge". As the saying goes:
"After eating Start of Summer porridge, the stone steps can be stepped on
into pits" and "After eating a ball in Start of Summer, one can step
across the river in one step".
在湖南,立夏也会吃立夏粿,只不过此粿非彼粿,长沙说的果是指糯米粉拌鼠曲草做成的汤丸,同样也叫“立夏羹”。俗话说:“吃了立夏羹,麻石踩成坑”、“立夏吃个团,一脚跨过河”。
And in Loudi, Lixia Guo refers to sticking
rice flour and agglomerating it, pulling it into small pieces, rubbing it into
dumpling wrapper-like shape, wrapping the filling, closing the edges and
rounding it, and then putting it into the pot to cook, adding white sugar.
而在娄底说的立夏粿,是指粘米粉和结团,揪成小剂子,揉成饺皮状,包入馅,收边搓圆,随后入锅煮,放上白砂糖。
In some places, people eat "five-color
rice", which is made by mixing rice with red beans, soybeans, black beans,
green beans, and mung beans, and is also called "Start of Summer
rice".
有些地方吃“五色饭”,用红豆、黄豆、黑豆、青豆、绿豆五色豆拌合大米煮成,又称“立夏饭”。
These Start of Summer dietary customs, some
remind everyone to pay attention to summer tonic, and some also have the effect
of building a harmonious neighborhood relationship.

这些立夏食俗,有的提醒大家注意入夏食补,有的则还有构建和谐邻里关系的作用。
