面皮 Dough:
中筋面粉 550克 All-purpose flour 550g
开水 200克 Boiling water 200g
凉水 130克 Cold water 130g
馅料 Filling:
红薯粉条 100克 Sweet potato vermicelli 100g
豆腐 400克 Tofu 400g
卷心菜 400克 Cabbage 400g
干香菇 20克 Dried shiitake mushrooms 20g
香菜 2根 Cilantro 2 stalks
老抽 1/2汤匙 Dark soy sauce 1/2 tbsp
花椒 2克 Sichuan peppercorns 2g
姜泥 20克 Ginger paste 20g
盐适量 Salt to taste
白胡椒粉 1茶匙 White pepper powder 1 tsp
五香粉 1茶匙 Five-spice powder 1 tsp
自制蘑菇碎1汤匙 或市售蘑菇粉1茶匙  
Homemade mushroom crumbs 1 tbsp or store-bought mushroom powder 1 tsp
香油 1汤匙 Sesame oil 1 tbsp
油适量 Oil as needed
制作过程 Instructions:
将面粉放入大盆,加入1茶匙盐,倒入刚烧开的200克水,快速搅拌,再加入130克凉水揉成面团,静置半小时左右。
In a large bowl, add flour, pour in 200g of boiling water, stir quickly to form crumbs, then  add 130g of cold water and knead into a dough. Let it rest for about 30 minutes.
卷心菜切丁加1汤匙盐拌匀,放置一旁。香菜切碎、香菇、豆腐切丁或压碎。粉条煮5分钟或用开水浸泡20分钟,捞出切小段,拌入老抽(老抽这时拌入,粉条更好上色)。
Dice cabbage and mix with salt, set aside. Dice cilantro, shiitake mushrooms, and tofu (or crumble tofu). Boil vermicelli for 5 minutes or soak in hot water for 20 minutes, drain, chop, and mix with dark soy sauce.
起油锅,煎香花椒,捞出。下豆腐煎至金黄,加入香菇煎香,关火。
Heat oil in a pan, fry Sichuan peppercorns until fragrant, remove peppercorns. Fry tofu until golden, add shiitake mushrooms and fry until fragrant, then turn off the heat.
挤干卷心菜水分,放入锅中,加入香菜、白胡椒、姜泥、蘑菇粉、香油,搅匀,加盐调味。
Squeeze out excess water from the cabbage, add to the pan along with cilantro, pepper, ginger paste, mushroom powder, and sesame oil. Mix well and season with salt.
将面团揉成长条,切成12个小面团,每个约70克,擀成12-15厘米圆片,包入馅料,对折成半圆,压实边缘,捏出花边。
Roll the dough into a long strip, divide into 12 pieces (about 70g each), roll each into a 12-15cm round, add filling, fold into a half-moon, press the edges, and crimp to seal.
中小火煎至两面金黄。
Fry in a non-stick pan over medium-low heat until both sides are golden.
小贴士 Tips:
自制蘑菇碎做法:蘑菇洗净晾干再烤香,用料理机打磨成粗细颗粒,或直接购买烤蘑菇打碎。
Homemade mushroom bits: Clean and dry mushrooms, then roast and grind them into desired granules with a food processor. Alternatively, you can buy roasted mushrooms (they tend to have higher oil content).
可用市售蘑菇粉1茶匙代替自制蘑菇碎1汤匙。
1 tsp store-bought mushroom powder can replace 1 tbsp homemade mushroom bits.
放入馅料时只放半圆形并空出边缘,对折时馅料不会跑出,内折花边使边缘紧实美观。
When adding the filling, place it in a half-moon shape leaving the edges empty to prevent spilling. Crimping the edges ensures a tight seal and looks decorative.
